Carson’s on Whitfield to Open After Labor Day in Guilford
Tourists may be leaving for the season soon, but a new restaurant is on its way into town. After months of construction, Carson’s on Whitfield is getting ready to open after the Labor Day holiday.
The new American-style restaurant will fill the space on the corner of Water and Whitfield streets, formerly Colors Café. Business partners Jim Kirtopoulos, owner of GW Carson’s Burger Bar in Branford, and Ginway Lin, owner of 9East in Branford, will open the restaurant together.
Kirtopoulos said the restaurant team is just finishing up final touches on the new space.
“We are in the process of hiring and just wrapping up some of the fine points of the décor,” he said. “She is almost ready, so probably an opening after Labor Day. It is a little bit later [than we first expected], but that happens in construction.”
Despite the delays in construction, Kirtopoulos said the restaurant space has character.
“We found an old brick wall—the original wall in the building—and we were able to expose that,” he said. “We did some barrel vault ceilings in there, too.”
For now, Kirtopoulos said they are finalizing the staff and are currently accepting applications.
“We are actually pretty good with the front of the house, which is our wait staff,” he said. “We have our management in place; we have bartenders pretty much in place, busboys, and dishwashers we have. We need some line cooks—that is pretty much what is holding us up at this point. Experienced line cooks would be great.”
Executive Chef Argenis Rodriguez, a sous chef at the former Whitfield’s Restaurant, will head the new restaurant staff up. Kirtopoulos said he will be just one of many familiar faces.
“We have many familiar faces from in town including bartenders from the Stonehouse and our floor managers are from the old Whitfield’s,” he said. “We have some wait staff from the old Whitfield’s coming back so everyone can look for some familiar faces.”
All and all, Kirtopoulos said he is excited to bring this new restaurant to town.
“We are filling a void that Whitfield’s left,” he said.
