09/22/2022 12:00 AMIt’s peak pear season over at Bishop’s Orchards, 1355 Boston Post Road, Guilford, and they have three varieties in season, Bartlet, DeVoe, and Bosc. Bartlett’s, say the folks at Bishop’s, are sweet, juicy, and they start green and then ripen to yellow once you get them home. They are good for eating out of hand and can be used in recipes. DeVoe are green with a pink-ish cast, and Bishop’s recommends those for a charcuterie board since they go well with cheese and crackers. Bosc, long-necked pears, are a russet brown, and are best for baking, broiling, or poaching since their flesh stands up well to assertive, warm, fall spices like cinnamon, clove and nutmeg. Bishop’s also offers Pearadise and Whitfield’s Pearadox wines, made with fruit from their orchards.
