03/31/2022 12:01 AMBlack Jax Saloon really isn’t a saloon, although the gorgeous bar, and the people who sit there, remind me of the camaraderie of the Black Seal in Essex, with customers drinking dark and stormies and eating burgers. Black Jax has owner/chef Jack Flaws in the kitchen. The food is not an afterthought and the prices might give you pause. But the menu is heavy on meat and the burgers are pure heaven on a plate. My burger, called the Arrogant Bastard, hand-patted by Jack of glorious brisket and sirloin, was at least two inches high and topped with fig jam, arugula, grilled red onion, and Taleggio cheese sandwiched by a kitchen-made brioche. It was served with a sweet slaw and enormous made-by-Jack steak fries. I ate half of the bun, the entire burger, all the slaw, and two of the fries. I’m looking forward to further exploring the menu next time I go. Note that your GPS might think it’s in Essex, but it is in Centerbrook.
