Simple Sandwiches
One of the highlights of Facebook are the videos featuring Madison’s Jacques Pépin, the world-renowned chef and cookbook author, shot with the help of his neighbor Tom Hopkins and Pépin’s daughter, Claudine. These sweet meals, often taking advantage of leftovers or inexpensive ingredients, when combined with Pepin’s impeccable technique, are an inspiration. A recent video featured a sandwich that James Beard, another pioneer of the American food industry, once made for Pépin. It is a simple onion sandwich, with mayo and a touch of mustard, on white bread, festooned with freshly chopped chives on the edges that make it look like it’s ready to go to a party. Pepin, in his video, riffs on it by using a thinly sliced radish instead, with butter and salt.
