‘Don’t Burn the Cheese!’
One of Vinnie Penn’s favorite recipes from his new book, Route One Food Run, is the Mac and Cheese from Lynn’s Deli on East Main Street in Branford. One reason why Penn loves it is because the recipe itself was written in owner Lynn DeMusis’s father’s handwriting. Her father, Babe DeMusis wrote on the recipe, “Don’t burn the cheese! Have a nice day.” Penn says the mac and cheese itself is “creamy and satisfying,” and “comfort food at its best.” This recipe will feed a crowd.
Lynn’s Deli, Mac and Cheese
From Route One Food Run by Vinnie Penn
Ingredients:
4 (12-ounce) cans evaporated milk
2 quarts light cream
½ pound American cheese
½ pound Velveeta cheese
4 pounds elbow macaroni
Grated parmesan cheese, to taste
Combine milk, cream, and cheese in a medium saucepan and stir until cheese melts, set aside.
Cook pasta according to package instructions. Strain and add to saucepan with cheese. Mix well and sprinkle with grated cheese. Remember, “don’t burn the cheese!”
