Nibbles: Sweet Corn = Gold


Sweet corn is here. I bought my first at Whittle’s in Mystic and used it to make quinoa salad. I bought six ears. How much was it? Who cares? It is sweet corn and we only have it for another month or two. Maybe it costs 40 cents each ear, so if you are four people and each eats three ears, that’s $1.20. Compare that to a crappy hamburger. Think of that sweet corn as gold.

Look for fat ears and tassels that are silky, even a little wet. Please, please, please don’t husk that ear. It isn’t going to tell you much, but that corn probably can’t be sold. Your farmer won’t be selling any beautiful vegetables for another 10 months, and he or she has a family to feed. You can afford to get one ear out of five or six dozen with a bad patch; just cut it off.

And if you have a choice, go to a farmer’s market or farm stand. The sweet corn has probably picked just a few hours ago. Cook it that day, if you can, just 3 minutes in boiling water. Butter. A little salt, if you need it.
