Enriched with sweet linden honey and suspended in individual cloths during aging to create a concave shape. It’s in this concave that the lime-tree honey is added and during aging binds the cheese with delicious lime-flower and honey flavor. Try it in risotto or with cured meats like salami or on its own with a glass of Sangiovese,” say the cheesemonger at Cheese Shop of Centerbrook.
